Pantry: AWESOME Fajitas

It’s Taco Tuesday in our house…and this gal has delivered on all fronts! The boys asked for Steak…AND Chicken. So, I went and got a chicken breast and a strip steak….sliced them both and marinated them in a “to die for” marinade that took our Taco Tuesday to a new dimension.

Ok…so let’s get this party started. First. We need to marinate our meats and veggies. Slice up a red, yellow, and green pepper. Slice up a red onion. Chop up some fresh cilantro. Slice your chicken and steak. Put veggies in a bowl. Put Chicken in a bowl. Put Steak in a bowl. Set Aside….let’s make our marinade….

The Best and ONLY marinade you will ever NEED:

1 cup of veggie oil

1/2 cup of apple cider vinegar

1/4 cup of soy sauce

2 TBSP of sesame oil

1 TBSP of worheshire sauce

2 TBSP of chopped garlic

2 TBSP of chopped fresh grated ginger

1/4 cup of brown sugar

handful of chopped fresh cilantro

zest and juice of one lime

1 TSP of cumin

Mix and marinate each with own batch of marinade (chicken, steak, veggies)

MUST USE CAST IRON SKILLET….I have said this before…You must invest in a BIG cast iron skillet. I have one that is the best. Whether Frying Chicken. Making burgers, or now…Fajitas…this is a must have in your kitchen.

Ok…so let’s start charring our meats and veggies. In a hot cast iron skillet, melt half a stick of butter and about a TBSP of veggie oil. Add your chicken…saute and flip once charred nicely on each side. Remove. Add your steak…remove. Then add your veggies…char it on the ends…that it the flavor.

Serve with corn or flour tortillas. Sour Cream. Fresh Cilantro. Lime wedges. ENJOY…xoxo, JENNY.
