Loosen up those belts Boys….Pull out those MuMu Dresses Ladies….This burger delivers on all fronts. Unfortunately, including adding to the scale. But Man oh Man, is it worth it. I know…I know…I know….We need to be pool ready next weekend, but a good burger IS SUMMER, and this gal intends to make this one again! Enjoy!
Prep time: 10 mins
Cook time: 10 mins- Burgers, 30 mins caramelized onions and bacon
Total time till Gluttony: 40 mins.
Ingredients: (3 Large patties)
1 lb of ground chuck
1/2 cup of FINELY chopped sweet onion
1/4 cup of chopped fresh Cilantro
2 TBSP of cold water (I like to put water in my meatballs and burgers. keeps them moist)
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of paprika
1 TBSP of Worcheshire Sauce
1 tsp of fresh cracked pepper
NO SALT (I never salt a burger. The salt will pull all the moisture out)
1 stick of butter for pan searing (YES an entire stick of butter)
Sliced sweet onion (caramelized)
1 TBSP of brown Sugar (for caramelizing onion)
Thinly sliced beefsteak tomato
Dill hamburger pickles
Ok…so let’s start with forming our patties. Don’t over-work your meat. Add all the ingredients to meat and form into patties. Make your patties an inch bigger than your roll. The meat will shrink while cooking.
Now…I DON’T GRILL. I understand the purest out there and I can appreciate the taste of charcoal and smoke…but, I just really love to pan sear mine in a cast iron skillet in BUTTER. Yes….AN ENTIRE STICK OF BUTTER. So, let’s heat our cast iron skillet and melt our butter.
Flip your patties after 5 mins and PLEASE DON’T PRESS OUT THE JUICY GOODNESS. Cook on other side for 5 mins. Remove and set aside.
Now it is time to caramelize our onions. Let the burgers rest on the side for now. They will return to a warm oven in a bit. But now, let’s focus on these onions. Slice up a sweet onion. Add another half stick of butter. A little Olive Oil and about a TBSP of brown sugar. On low heat, let the onions pan sear for about 30 mins…until golden brown and perfectly caramelized.
Put burgers into oven at 200 degrees and top with YELLOW AMERICAN CHEESE.
Now with our caramel onions done, take them out. Add your bacon into the skillet. Brown to crisp in the caramel goodness left over from the onion.

It’s time to make your burger. I always top mine with caramelized onions, bacon, thin sliced tomato, shredded lettuce, mayo, mustard, ketchup and pickles.
